- For the Paneer Tikka Marinade~
- 200grm Paneer
- 1/2 Cup Onions (cut in big squares)
- 1/2 Cup Capsicum (Cut in squares)
- 1 1/2 tbsp Mustard Oil
- 2 tbsp Thick Curd
- 1/2 tsp Ginger Garlic Paste
- 1 tbsp Besan (Gram Flour)
- 1 tbsp Kashmiri Red Chilli Powder
- 1/4 tsp Black Pepper Powder
- 1/2 tsp Jeera Powder (Cumin Powder)
- 1/4 tsp Garam Masala
- 1/4 tsp Kala Namak (black salt / rock salt)
- 1/4 tsp Chaat Masala
- 1/4 tsp Kasuri Methi
- 1/4 tsp Salt
- For the Gravy ~
- 1 tbsp Ghee
- 1 Black Cardamom
- 1 Green Cardamom
- 1 Clove
- 1 Kashmiri Red Chilli
- 2 black pepper corns
- 2 medium size Onions (finely chopped)
- 2 big size tomatoes (finely chopped)
- 1 1/2 tsp Coriander Powder
- 1/2 tsp red chilli powder
- 1/2 tsp Garam Masala
- 1/4 tsp Red Food Colour
- as per taste Salt
- As required Water
- 1 tbsp Butter
- 1 Live Charcoal
Instructions to make to make Paneer tikka masala
- In a pan heat 1 tbspn Ghee. To this add the whole spices-
Clove, black and green Cardamom, Kashmiri Red Chilli and black pepper corn.
Saute for a bit. Add chopped onions and saute until golden brown.


- Add finely chopped tomatoes. Add salt and saute well.


- Put in all the powdered spices- coriander powder, garam masala and red chilli powder. Give it a good mix.


- Add food colour and mix well. Turn off the flame and cool down the masala.


- In a mixer jar put the masala. Add ¼ cup water and grind it to a fine paste.
Keep it aside.


- In another pan heat mustard oil. Let it reach the smoking point and then turn off the flame to cool it a bit. Now again turn on the flame and add besan. Saute well to remove the rawness from the besan. Add Kashmiri Red Chilli Powder and mix well. Remove from heat and transfer it into a bowl. Let it cool.



- Now add the dry spices-
black pepper powder, garam masala, jeera powder, rock salt, chaat masala and salt to taste. Put Curd, ginger garlic paste and kasuri methi. Mix everything well.


- Put Onions, Capsicum and Paneer pieces. Mix everything well and keep it covered for 1 hour.



- Put marinated paneer and veggies into wooden skewers. DO NOT THROW AWAY THE LEFT OUT MARINADE.
Grill them in a 180° preheated oven a for 20 min.
Or until cooked well.
You can even grill it on a pan.


- Now put the gravy into the pan along with the left over marinade. Add butter and Mix well.



- Put Paneer Tikkas into the gravy and mix well. Add some water and let it cook for a minute.



- Place a live charcoal in a katori and a tspn of ghee and cover it immediately. Keep it covered for a minute to allow the gravy absorb the smoke.



- Serve Paneer Tikka Masala with Naan, Rotis or Parathas.
